How to Prepare Tanfiri

Preparing Tanfiri is a straightforward process combining simple ingredients to create a delicious and nostalgic Nigerian snack. The key ingredients are roasted maize flour, groundnuts (peanuts), sugar, and spice. Here’s a step-by-step guide to making Tanfiri at home:

 Ingredients

  •     2 cups of roasted maize flour (corn flour)
  •     1 cup of roasted groundnuts (peanuts), ground into a fine powder
  •     ½ cup of granulated sugar (adjust to taste)
  •     One teaspoon of ground ginger (optional for a spicy kick)
  •     One teaspoon of cayenne pepper or chilli powder (optional for heat)
  •     A pinch of salt
  •     Warm water (as needed)

 Method

Step 1: Roast the Ingredients

 Start by roasting the maize (corn) kernels and groundnuts if they aren’t already roasted. You can do this by spreading them on a baking sheet and roasting them in a preheated oven at 350°F (175°C) for 10-15 minutes or until golden brown and aromatic. Alternatively, you can roast them in a pan on the stove over medium heat, stirring constantly to prevent burning. Allow them to cool completely.

Step 2. Prepare the Maize and Groundnuts

Once the maize and groundnuts have cooled, grind them separately into fine powders using a food processor, mortar, and pestle. The roasted maize will be your maize flour, while the groundnuts will turn into groundnut powder.

Step 3. Mix the Dry Ingredients

Get a large mixing bowl, combine the roasted maize flour, groundnut powder, sugar, ground ginger (if using), cayenne pepper or chilli powder (if using), and a pinch of salt. Stir the ingredients together until they are well blended.

Step 4. Form the Dough

Gradually add warm water to the dry mixture, a little at a time, while continuously mixing. The goal is to achieve a moldable dough-like consistency that is not too wet. The mixture should hold together when pressed but should be smooth. Once the dough is ready, start forming small, bite-sized balls or cubes with your hands. You can make them as big or small as you prefer, but traditionally, Tanfiri is shaped into small, round balls. To ensure consistency, use a small ice cream scoop or tablespoon as a measure.

Step 5: Allow to Set

Place the shaped Tanfiri balls on a flat tray or plate and allow them to set for about 10-15 minutes at room temperature. This helps them firm up and hold their shape.
