How to Prepare Puff-Puff

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • Two teaspoons of active dry yeast
  • 1/2 teaspoon salt
  • 1 1/4 cups warm water (about 110°F/45°C)
  • Oil for frying (vegetable or canola oil works well)
  • A pinch of nutmeg or vanilla extract for added flavour (Optional)

Method

Step 1: Activate the Yeast

In a small bowl, dissolve two teaspoons of active dry yeast and two tablespoons of sugar in 1/2 cup warm water. Let it sit for about 5-10 minutes until it becomes frothy. The frothiness indicates that the yeast is active.

Step 2. Mix the Dry Ingredients

Then, get a large mixing bowl and combine 2 cups of all-purpose flour, the remaining sugar, and 1/2 teaspoon of salt. If you are using nutmeg or vanilla extract, add it to the dry ingredients.

 Step 3: Combine all the Ingredients

Make a well in the centre of the dry ingredients and pour in the yeast mixture.  Gradually add the remaining warm water (3/4 cup) while mixing with a wooden spoon or your hands until you have a smooth, sticky batter. Please ensure your hands are thoroughly clean to prevent contamination. 

Step 4: Let the Dough Rise

Cover the bowl with a clean cloth or plastic wrap and let the batter rise warmly for about 1 hour or until it appears bloated. The dough should be very bubbly and airy.

  Step 5: Heat the Oil

 In a deep fryer or a large, deep pan, heat about 2-3 inches of oil to 350°F (175°C). The oil must be hot enough to fry the dough quickly and evenly.

  Step 6: Fry the Puff-Puff

Once the oil is hot, use a spoon or your hands to scoop small amounts of the dough and drop them into the oil. Be careful not to overcrowd the pan. Fry the dough balls in batches, turning them occasionally until the fried dough is golden brown. This should take about 3-5 minutes.

 Step 7: Drain and Serve

Use a slotted spoon to remove the Puff-Puff from the oil and place them on a plate lined with paper towels to drain any excess oil.
