Tanfiri, also known as “Donkwa” in the Northern region of Nigeria, is a wholesome, delicious snack that leaves you craving more with every bite. Like a storyteller, it weaves tales of Nigerian streets, childhood games, and the warmth of home. Made from roasted maize flour and groundnuts, Tanfiri is the crunchy, slightly sweet treat that has been delighting taste buds for generations. Imagine walking through the streets of Nigeria, the air filled with the rich aroma of freshly roasted maize and groundnuts. You hear a familiar voice calling out, “Tanfiri! Tanfiri!”— suddenly, you’re not just in the street anymore. You’re a child again, eagerly clutching a few Nairas, ready to buy a handful of your favourite snacks. Tanfiri’s journey starts in the fields where maise and groundnuts are harvested under the warm Nigerian sun. Once collected, these humble ingredients transform. The maize is roasted until golden brown, and its natural sugars caramelise perfectly. The groundnuts are roasted, and their oils release a rich, nutty aroma.

Then comes the fun part—the grinding, where the groundnuts are pounded with rhythm and precision. It’s a labour of love that brings people together, and it’s in these moments that the deliciousness of Tanfiri is truly born.

Do you remember the first time you tasted Tanfiri? Maybe you were on your way home from school, hungry from a long day of learning and play. You saw a vendor with a colourful umbrella, his cart piled high with little bags of Tanfiri. You handed over your coins and received a paper-wrapped treasure in return. The crumbly texture and sweet, nutty flavour filled your mouth as you took that first bite. Instantly, you were hooked. It wasn’t just the taste—the way Tanfiri seemed to hold childhood’s joy and excitement in every bite. It was the perfect snack for an after-school treat, a midday pick-me-up, or a secret delight to be savoured slowly, one piece at a time.

Like a companion, Tanfiri has travelled with us through various stages of life, from childhood to adulthood. It has been there in our school lunchboxes, work bags, and even our pockets during long journeys. Each piece of Tanfiri carries a memory, a feeling, a story uniquely our own.

Today, Tanfiri is experiencing a comeback. As more people seek to reconnect with their cultural roots and childhood foods, Tanfiri has found a new generation of fans. Artisanal confectioners are putting their spin on this classic snack, experimenting with new flavours while honouring traditional methods. Social media is filled with posts of people sharing their Tanfiri moments, reminiscing about the good old days, and introducing this beloved snack to friends from other cultures.

Do you want to learn how to prepare Tanfiri at home? Here’s a simple recipe for you.

How to Prepare Tanfiri

Preparing Tanfiri is a straightforward process combining simple ingredients to create a delicious and nostalgic Nigerian snack. The key ingredients are roasted maize flour, groundnuts (peanuts), sugar, and spice. Here’s a step-by-step guide to making Tanfiri at home:

 Ingredients

  •     2 cups of roasted maize flour (corn flour)
  •     1 cup of roasted groundnuts (peanuts), ground into a fine powder
  •     ½ cup of granulated sugar (adjust to taste)
  •     One teaspoon of ground ginger (optional for a spicy kick)
  •     One teaspoon of cayenne pepper or chilli powder (optional for heat)
  •     A pinch of salt
  •     Warm water (as needed)

 Method

Step 1: Roast the Ingredients

Start by roasting the maize (corn) kernels and groundnuts if they aren’t already roasted. You can do this by spreading them on a baking sheet and roasting them in a preheated oven at 350°F (175°C) for 10-15 minutes or until golden brown and aromatic. Alternatively, you can roast them in a pan on the stove over medium heat, stirring constantly to prevent burning. Allow them to cool completely.

Step 2. Prepare the Maize and Groundnuts

Once the maize and groundnuts have cooled, grind them separately into fine powders using a food processor, mortar, and pestle. The roasted maize will be your maize flour, while the groundnuts will turn into groundnut powder.

Step 3. Mix the Dry Ingredients

Get a large mixing bowl, combine the roasted maize flour, groundnut powder, sugar, ground ginger (if using), cayenne pepper or chilli powder (if using), and a pinch of salt. Stir the ingredients together until they are well blended.

Step 4. Form the Dough

Gradually add warm water to the dry mixture, a little at a time, while continuously mixing. The goal is to achieve a moldable dough-like consistency that is not too wet. The mixture should hold together when pressed but should be smooth. Once the dough is ready, start forming small, bite-sized balls or cubes with your hands. You can make them as big or small as you prefer, but traditionally, Tanfiri is shaped into small, round balls. To ensure consistency, use a small ice cream scoop or tablespoon as a measure.

Step 5: Allow to Set

Place the shaped Tanfiri balls on a flat tray or plate and allow them to set for about 10-15 minutes at room temperature. This helps them firm up and hold their shape.

And your Tanfiri is now ready to be enjoyed! You can serve it immediately or store it in an airtight container to keep it fresh. Tanfiri makes for a great snack on its own or as a sweet snack to tea or coffee.

In conclusion, Tanfiri is a delightful snack that’s easy to make and flavorful. With its nutty taste and slightly sweet and spicy notes, it’s perfect for sharing with friends and family or enjoying yourself as a nostalgic treat.

Next time you bite into a piece of Tanfiri, close your eyes and be transported to nostalgic moments. Remember the warmth of the sun on your face, the sound of children playing in the distance, and the comforting crunch of Tanfiri in your mouth. Remember the stories of this delicious treat, the laughter, and the joy shared over small paper bags.

Happy snacking!
