How to Prepare Kilishi

Ingredients

  • 1 kg beef (preferably lean cuts like sirloin or round)
  • Two tablespoons ground pepper (adjust to taste)
  • Two tablespoons paprika
  • One tablespoon of ground ginger
  • One tablespoon of garlic powder
  • One tablespoon of onion powder
  • One tablespoon of soy sauce
  • One tablespoon of tomato pastes or five sized Fresh tomatoes
  • One tablespoon of groundnut oil or vegetable oil
  • Salt to taste
  • Water (as needed)

Instructions

Step 1: Prepare the Beef

 Slice the beef into thin strips, about ⅛  inch thick. For best results, partially freeze the meat before slicing; this makes it easier to cut into thin strips.

Step 2: Make the Marinade

 In a large bowl, combine the ground pepper, paprika, ground ginger, garlic powder, onion powder, soy sauce, tomato paste or blended fresh tomatoes and oil. Mix well to form a thick paste. Add salt to taste.

Step 3: Marinate the Beef

Add the beef strips to the marinade, ensuring each piece is well coated. Cover the bowl and refrigerate for at least 4 hours, preferably overnight. This allows the flavours to marinate properly.

Step 4: Prepare for Drying

Preheat your oven to the lowest setting (around 150°F or 65°C). If you’re using an oven, place a wire rack over a baking sheet to catch drips. Arrange the marinated beef strips on the rack in a single layer. 

Step 5: Dry the Beef

Dry the beef strips in the oven or dehydrator for 4-6 hours or until they are scorched and crispy. If using an oven, open the door slightly to allow moisture to escape. The beef should be firm and break easily when bent.

Step 6: Cool and Store

Once dried, let the Kilishi cool completely. Store in an airtight container or resealable bag. If refrigerated, it can be kept at room temperature for several weeks.
