How to prepare Ofe Owerri

 

Ingredients

Protein

  •     1 kg assorted meat (goat meat, beef, cow tripe, etc.) 
  •     500g stockfish
  •     200g dry fish

A mix of beef, goat meat, tripe, stockfish, and dried fish provides a rich, savoury base.

Vegetables

  •     2 cups of sliced Uzzia leaves
  •     2 cups of sliced Ugu (fluted pumpkin) leaves

The essential greens add a fresh, slightly bitter flavour and a vibrant green colour.

 Thickening Products

  •     Two slices of cocoyam or 2 cups of cocoyam flour (as a thickener)

Cocoyam is traditionally used to thicken the soup, giving it a creamy and smooth consistency.

  •     Two tablespoons of ground crayfish
  •     One tablespoon of ground pepper
  •     ¼ bottle of Palm Oil
  •     Local Seasonings such as Ogiri (fermented oil seeds) and a blend of other spices elevate the soup’s flavour profile.
  •     Two seasoning cubes to taste
  •     Snails and Periwinkles
  •     Salt to taste
  •     Water

  

Method

Prepare the Ingredients

  • Start by washing and cutting the assorted meat into pieces. Cook the meats and fish with onions, salt, and seasoning cubes until tender. 
  • Wash and debone the dry fish and stockfish. Soak them in hot water to soften. Add the dry fish to the pot and allow it to cook for another 5 minutes.
  • If you’re using fresh cocoyams, peel, wash, and boil them until tender, then blend or pound them into a smooth paste. If you’re using cocoyam flour, add 2-3 tablespoons and stir until you have a thick consistency. Then, transfer the paste to the pot and stir until it is evenly distributed.
  • Add the palm oil, crayfish, ogiri, and other spices. Stir well and let it cook for 10 minutes. Gradually adjust the seasoning to your taste. 
  • Finally, add the vegetables (Ugu and Ukazi leaves). Let the soup simmer for a few minutes until the vegetables are cooked but still vibrant. Ensure the consistency is to your liking. If it is too thick, you can add a little water.

 

Serve your delicious Ofe Owerri hot with pounded yam, fufu, or any swallow of your choice. 

 While Ofé Owerri remains rooted in tradition, contemporary variations have emerged. Across Nigeria, some cooks experiment with different vegetables or use modern kitchen appliances to streamline cooking.
