How to Prepare Efo Riro

Efo Riro is a delicious and hearty Nigerian spinach soup that’s both flavorful and nutritious. Here’s a step-by-step guide to preparing this iconic dish.

 Ingredients  

Vegetables

  •     Two bunches of fresh spinach (or substitute with kale or pumpkin leaves)
  •     One large onion, chopped
  •     2-3 tomatoes, chopped
  •     Two red bell peppers
  •     1-2 scotch bonnet peppers (adjust based on heat preference)
  •     2-3 tablespoons of locust beans (Iru)
  •     ¼  -½  cup palm oil

Proteins

  •     500g assorted meats (beef, goat meat, or chicken)
  •     1 smoked fish or stockfish (optional)
  •     1 cup of crayfish (ground)
  •     2-3 bouillon cubes (or to taste)
  •     Salt (to taste)
  •     One teaspoon of ground pepper
  •     Water (as needed)

 Method

Step 1: Prepare the Vegetables

Blanch the spinach thoroughly in cold water to remove any dirt. Boil a pot of water and blanch the spinach by dipping it in for about 2-3 minutes, then immediately transfer it to a bowl of cold water to stop the cooking process. Then drain the spinach, squeeze out excess water, and roughly chop and set aside.

Step 2: Blend the Peppers

Combine the red bell peppers, scotch bonnet peppers, and tomatoes in a blender. Blend until smooth, then set aside.

Step 3: Cook the Proteins

Wash the meat thoroughly. Then place it in a pot. Add half of the chopped onion, a seasoning cube, salt, and enough water to cover the meat. Cook until tender. Set the meat and stock aside. Subsequently, prepare the smoked fish. If using, rinse thoroughly and soak in warm water to soften. Remove the bones and set aside.

Step 4. Make the Soup Base

 Heat the palm oil over medium heat in a large pot until it becomes slightly smoky, enhancing its flavour. Then fry the Onion and iru (locust bean) until the onion becomes translucent in the oil. Add the blended pepper mix and fry, stirring occasionally, until the sauce reduces and the oil starts to separate from the mixture.

Step 5. Combine the Ingredients

Here is the fun part! This is where we add the meat, crayfish, and every other ingredient. 

Add the cooked meat and its stock to the pepper mixture. Stir in the ground crayfish and smoked fish (if using). Allow the mixture to simmer for 10-15 minutes for a perfect blend of flavours. Then, stir in the blanched spinach, ensuring it’s well mixed with the sauce. Let the soup cook for another 5-10 minutes. Adjust seasoning with seasoning cubes, ground pepper, and salt as needed.

Once the soup is cooked, please remove it from the heat and allow it to cool for a few minutes. Efo Riro can be served with hot rice, pounded yam, fufu, or any preferred side dish.
