Authentic Nigerian Okro Soup Recipe – Simple & Delicious

How to Prepare Okro Soup

Ingredients

  •     10-15 Stalks of fresh Okro (okra), chopped or grated
  •     500g assorted meat (beef, goat meat, or a mix)
  •     200g stockfish, soaked and softened
  •     200g smoked fish, deboned
  •     1 cup prawns or shrimp (optional)
  •     One large onion, chopped or ground
  •     Two tablespoons ground crayfish
  •     Two tablespoons locust beans (iru or ogiri)
  •     1-2 Scotch bonnet peppers, chopped (optional for heat)
  •     ½  cup palm oil
  •     1-2 cups chopped spinach or ugu (fluted pumpkin) leaves
  •     Seasoning cubes
  •     Salt to taste
  •     Water or broth, as needed

Method 

Step 1: Prepare the Ingredients

Wash and chop the okro into small pieces. You can slice it thinly for a chunkier texture or grate it for a smoother consistency. Then, clean and cut the assorted meats into bite-sized pieces. Rinse the stockfish and smoked fish, removing any bones.

Step 2: Cook the Meat/Protein

 Add the assorted meats, half of the chopped onions, and some salt in a large pot. Add enough water to cover the meat and bring it to a boil. Cook until the meat is tender, about 30-45 minutes, depending on the type of meat. Add the stockfish during the last 15 minutes of cooking to allow it to soften further.

Step 3: Add the Palm Oil and Seasonings

Once the meat is tender, add the palm oil to the pot and allow it to fuse into the broth. Stir in the remaining onions, locust beans, ground crayfish, and stock cubes. If you like spicy soup, add the Scotch bonnet peppers. Allow this to simmer for 5-10 minutes, blending the flavours deliciously.

Step 4: Cook the Soup Broth

Add the chopped or grated Okro to the pot. Stir well to combine with the broth and other ingredients. Let the Okro cook for about 5-7 minutes. Be careful not to overcook it; you want to maintain its vibrant green colour and slightly crunchy texture. Add the Fish and Prawns. Then, gently add the smoked fish and prawns (if using) to the pot. Stir carefully to avoid breaking up the fish too much.

Simmer for another 5 minutes, allowing the fish and prawns to absorb the soup’s flavours. Stir in the chopped spinach or uwgu leaves. These will cook quickly, so give them a couple of minutes to wilt and blend into the soup.
